Timothy Berton to focus on safety, productivity and quality

As production team leader, Berton oversees all manufacturing and production processes. His responsibilities include the safety and productivity of production employees, plant security, process monitoring and improvements, and other analysis and operations duties.

Berton previously held a position at a janitorial/sanitation company where he focused on employee training, client communications, job site prep and monitoring, timekeeping, and managing supply records. He holds a degree in interior design from Adrian College, where he tutored students in AutoCAD.

Frontline International Helps Harvard Excel at Cooking Oil Management

Harvard University Dining Services (HUDS) is the oldest collegiate foodservice establishment in the country, as well as one of the largest. With a staff of 650, they serve an average of 25,000 meals a day during the academic year and 5 million meals annually. And a lot of those meals involve fryers and cooking oil.

Director for HUDS Operations & Facilities Robert Leandro has been doing the job for 40 years. He not only oversees renovations and maintenance but also is HUDS’ environmental safety and compliance manager. Leandro realized the university’s foodservice operations needed a better system for managing used cooking oil to comply with the university’s spill prevention and containment program.

“Like a lot of folks, we had 55-gallon drums and dumpsters outside for waste oil,” Leandro said. “Employees would try to pour hot oil in, it would spill; it was not a great system. We wanted to bring the storage inside and find a way to minimize spills.”

He wanted a system that would work for all 30 locations in which they operate on Harvard’s campus. And HUDS had a particular challenge. Unlike chain restaurants, HUDS establishments’ menus are different every day, and they also change seasonally. He needed a solution that could work everywhere there was a fryer on campus, whatever the setup, menu, or volume.

Leandro was introduced several years ago to Frontline International at the annual National Restaurant Show in Chicago. He enjoyed their conversation and was impressed with their products. “It was the people that made the real difference,” said Leandro. In 2000, he made the decision to start phasing in Frontline’s equipment.

Initially, they used Frontline’s caddy system to shuttle waste oil from fryers to storage tanks, into which it could be pumped hands-free. That was a big improvement over previous methods they had used. The caddy system proved to be very economical, and it is ideal for operations where space is tight or where older fryer equipment does not allow for a direct-plumbed system. Utilizing caddies eliminated the old method of an employee physically carrying used oil in buckets, so it lowered the risk of spills, injuries, and accidents.

In 2004, Harvard underwent a renovation to some operations in its dining facilities, and Leandro took that opportunity to install Frontline’s direct-plumbed system. The direct-plumbed system is fully automated, allowing oil to flow from fryers to storage tanks with just the push of a button. “We’ve even retrofitted some of our existing fryers so they can be pumped to the tank,” said Leandro. “To this day, I haven’t had any problems.”

Leandro’s approach has even changed the way his suppliers do business. For example, he was such a fan of Frontline’s equipment that he required his renderer to provide Frontline’s tanks. However, the company from which he purchases HUDS’ fryers wouldn’t build or alter their fryers in order to allow the used oil to be pumped directly to the storage tanks. But Leandro knew many other vendors who would. He pushed his supplier to change. “I went to the president of the company and said, ‘I can’t buy from you anymore. These other companies, they will do it.’ Now, their fryers are suddenly able to [be direct-plumbed]!” He added, “If people are hesitant, I can assure them: Whatever frying company you are buying from will adapt their fryers. They have to.”

Leandro’s previous foodservice positions include cook, butcher, pantry steward, production manager, general manager, and Assistant Director for Residential Dining at Harvard. He was promoted to his current position in 2005.

Because of his wide-ranging experience in the field, Leandro is often asked for his opinion or to speak at industry gatherings such as for the National Association of College & University Food Services. “I always suggest Frontline. Frontline International Delivers “Oil” the Advantages to Southern Burger Chain

Back in the 1950s, the founder of a burger chain set out to “wow” customers from their first bite of a burger so good that they’d say, “Now that’s a delicious burger!” His mission was to establish a restaurant with a reputation for quality and fresh taste, and, in its seven decades, the chain has grown to more than 700 stores dotting nearly a dozen states across the South.

So when the popular chain began working a few years ago with Frontline International to achieve better management of its restaurants’ cooking and waste oil, they also found a way to help increase their employees’ safety, protect their oil supply, and control costs.

The chain’s equipment manager has been with the company for 30 years. In that time, the burger business has changed, but not its daily use of many gallons of cooking oil and the resulting output of waste oil from cooking burgers and chicken and deep-frying fries. Hot oil is not only a slip-and-fall hazard in the kitchen, but toting and pouring hot waste oil into a dumpster is also a hazardous undertaking for employees. And then there’s the recent surge in waste oil theft. That’s why they called Frontline.

The chain has retrofitted about a dozen stores with Frontline’s direct-plumbed waste oil management system. With its push-button, hands-free technology, this system offers many benefits over previous systems, including the ability to reduce risk by controlling spills and by securing the waste oil with an anti-theft valve on its collection ports.

Waste oil theft is a growing crime of opportunity in areas where many of the chain’s burger stores are located, and the location of the waste oil tanks — inside or outside — doesn’t matter. “Waste oil is the new copper,” said the equipment manager. “We’ve even had shortening stolen from inside our stores. The thieves back a truck up to the building, suck the grease out, and leave. But with the anti-theft valve and without the password, it’s just a no-go and doesn’t work. The electronic valve is a great idea. It provides foolproof security.”

Frontline’s collection ports, where renderers hook up their trucks to pick up waste oil, feature an integrated anti-theft valve that makes it impossible for thieves to drain out the stored oil — and easier for the chain’s authorized suppliers to collect it. Waste oil tanks stored outside a foodservice establishment have the protected valve built in. For tanks stored on the interior, the same anti-theft valve extends to the building’s exterior.

Since the retrofitted stores were so pleased with Frontline’s system, in 2015 the burger chain decided to include its direct-plumbed fryer setup in the design and build of two new store locations.

The chain builds new locations from the ground up in 60 days, so the direct-plumbed system had to fit into that compressed timeline while also delivering advantages that would justify using the equipment from the word go. “When it’s included from the beginning,” the equipment manager said, “the plans can be part of the scope of work so there’s no confusion for inspectors, no special permits to secure. The equipment is obviously easier to use, safer and cleaner, sure — but we wanted to see what advantages we might get from including the equipment in a new store build.”

In addition to the security that Frontline equipment’s anti-theft valve brings, the burger chain has reaped benefits from implementing Frontline’s M3 data management system, which can be accessed anywhere there is an internet connection. The equipment manager discovered that the M3 system was able to weave seamlessly into the chain’s WAN (wide area network), giving him the ability to monitor the waste oil in all stores right from his computer. “The M3 system has also helped with monitoring our renderers, because now we can tell, when a certain number of gallons were supposed to be picked up, if a different amount was actually taken. That information can be very helpful in terms of long-term cost savings,” he said.

It seems likely that the chain will retrofit additional existing stores with the direct-plumbed system, he said, so their waste oil can be more safely and securely managed.” The chain is also considering including Frontline’s equipment as part of the new store building process in the future. Wow, indeed.

Frontline International Anti-Theft Innovation Part of Exclusive M3 Backend Data System

Just like copper wire from abandoned or foreclosed homes can attract opportunistic thieves, waste oil stored in an unguarded bin outside a restaurant or even in sealed indoor or outdoor tanks can become a target for waste oil thieves. 

According to a recent article in Renderer Magazine, used cooking oil’s increasing popularity in the biodiesel/biofuels industry has made it a “hot” commodity for several years now.

The Crime and How it Is Prevented

However waste oil is stored, in an unguarded outdoor bin or in even more sophisticated sealed indoor and outdoor tanks, it can become an easy target for this decade’s crime of opportunity. As it relates to tanks, if the valve used by legitimate oil collectors to pump waste oil from the restaurant remains unlocked between pickups, the thieves can easily access these unlocked valves and draw “liquid gold” from the establishment.

How it Works

The authorized oil-collection truck simply pulls up to the building and hooks up a drainage hose from the truck to the collection port. The anti-theft valve can then be opened remotely by either logging into the M3 Data Management System or by entering a password on a control panel on the tank itself. When the tank is empty, the valve is relocked. As a measure of comfort that the integrity of the system is supported, store personnel can log in and certify online any time the collection port is closed and locked.

Frontline Equipment Provides Custom Innovation for Burger Chain

Frontline International had a challenge. Their customer, a burgers-and-fries chain of restaurants with more than 300 locations, needed an equipment solution to efficiently manage the large quantity of cooking oil they use. The chain is dedicated to freshness, with no freezers or microwaves in any of their locations. In initial discussions with the customer, Frontline learned the company wanted a waste oil filtering system to help maintain the fresh taste they are famous for. Filtering cooking oil not only allows for longer and more consistent oil life, but can also reduce shortening waste, a sizeable cost savings for any burger chain.

The chain chose Frontline to create the custom oil filtering solution they needed. “Our customer needed a portable solution, as the size of their store locations wouldn’t physically allow for a built-in filter to be installed,” said Giovanni Brienza, vice president of Frontline. “Our standard waste oil caddy was closest to what they needed, but in order to work for their needs, it had to be tweaked to make it a perfect fit for their requirements. We worked together with the customer on modifying that system to provide them a custom solution.”

This collaborative effort resulted in Frontline’s new rolling Flexible Filter System, a stand-alone filtration method that also allows operators to easily switch between different oil-filtering media, depending on the location’s needs and usage practices.

The Flexible Filter System offers a choice of stainless steel and paper that can be easily swapped out. Stainless is the most economical choice. Paper is the next step up, and can increase the quality of fried foods. The new filter system is lower to the ground to make it easier to use and includes a removable bucket to simplify cleanup. The Flexible Filter System can be used with any type or size of fryer.

“In addition to providing a custom design, we were able to offer a cost-effective solution for the customer,” said Brienza. “Other companies couldn’t offer a great product that would match their need and desire to filter used cooking oil, given the restrictions of store sizes and setups. But through our joint effort, we came to a solution that would work well for them, and it was then rolled out to all of their store locations.”

Frontline’s Mobile Oil-Containment Tank Is a Dual Solution for Operators of Small/Large Facilities

Safe and easy storage and transport of waste oil

This concept — a mobile containment tank — is revolutionary and, depending on the size and volume of the foodservice establishment, actually becomes two products in one.

First, for large establishments with either remote waste cooking oil containment or central containment for many fryers positioned in varied locations, the new mobile containment tank acts much like an oversized caddy system — a collection system popularized when directly pumping a fryer to the containment tank was impossible or considered too costly or too complex. The new Tank Tank is a safe, easily wheeled tank that can be positioned close to the fryer, whereupon the fryer contents can be suctioned into the Tank. The mobile tank then can be moved to other fryers and, when it is full, operators simply wheel this temporary storage unit to a permanently positioned, centrally located containment tank, remove the Tank Tank’s lid, and pump used oil into the permanent tank. All hoses and attachments come standard with the mobile Tank Tank.

“The system was really designed to facilitate oil collection for multiple users in one place,” said Giovanni Brienza, vice President, Frontline International. “It’s ideal for owners of small storefront restaurants that are part of a food court. They often have to transport waste oil to storage tanks at a central location. The mobile tank allows you to wheel large volumes of used oil to the shared containment tank. This is also ideal for stadiums, casinos, airports and more.” Brienza further explained that the tank eliminates hand carrying of buckets, exposing customers to liability.

Second, for smaller establishments with a low fryer volume, the new mobile containment tank can serve as a clean, safe, all-in-one solution. Small bars or restaurants that serve fried foods would otherwise need to rely on an outdoor (and thus non-secure) corral or some other simple containment medium because the volume simply does not rise to a level that would warrant plumbed waste oil containment systems. With the Tank Tank, operators can now simply roll the tank to the fryer, then roll the tank back to its permanent position. Used cooking oil can be stored in the tank until the rendering company comes to collect it.

Frontline Oil Management Equipment “Takes Flight” at Giant Eagle

Proper management and storage of cooking oils, including fryer oil, waste grease, and meat fats, can improve restaurant safety and environmental conditions. And today, the sale of this waste oil is a booming industry, feeding biofuel production. These same opportunities await grab-and-go foodservice in the traditional supermarket. But equipment managers have found a need for greater flexibility from their oil collection equipment partners, since store layouts vary dramatically.

“And that’s where Frontline International has helped us to improve our existing processes,” said Daniel Donovan, Giant Eagle spokesperson.

Oil Management at Giant Eagle

Giant Eagle, a food, fuel and pharmacy retailer with more than 400 locations across four states, was in search of a comprehensive, safe and efficient way to deal with waste cooking oil in its in-store food preparation areas. In addition to seeking a solution for their full-service supermarkets, the company also wanted cooking oil management solutions for its 195 GetGo fuel stations and convenience stores. Giant Eagle produces many prepared foods for customers to easily pick up and take home, including ready-to-eat fried chicken, chicken tenders and chicken wings, which are made using in-store fryers. After evaluating many companies and options, Giant Eagle chose Frontline International’s waste oil transport caddy and waste oil storage tanks to enhance its processes.

The Frontline caddy offers a safe and secure method of siphoning out and then easily transporting used cooking oil to a Frontline waste oil storage tank. The used oil is then securely and safely stored until picked up by a rendering company. Storage tanks can be located inside or outside a facility.

Giant Eagle selected Frontline for its waste oil collection and storage because of the company’s safety features, efficiency and competitive pricing. In an ongoing project that spanned several years, the company’s waste oil transport caddies and storage tanks were installed in more than 300 of the company’s locations; however, there were challenges to overcome.

With many of the stores operating 24 hours a day, the installation of equipment had to be handled quickly and efficiently. With variations in store layout and design, the storage tank locations in each store were different. Then, workers had to minimize the operational downtime of food preparation areas and fryers during the installation of the new equipment, as downtime negatively affects the customer experience and food availability. Finally, and perhaps most important, the new equipment had to be in compliance with all rules and regulations regarding waste oil containment. “Meeting inspector compliance requirements for used oil containment was of crucial importance to us,” said Donovan. “This has been one of the most noteworthy benefits of installing Frontline’s equipment in our stores — that the Frontline equipment is compliant with all building inspection requirements for waste oil transport and storage.

Put simply, Giant Eagle needed process improvements for its waste oil collection and storage solutions, and Frontline’s waste oil caddy and storage tanks have delivered. As an added bonus, the new equipment and oil collection system help support Giant Eagle’s sustainability efforts in recycling used oil via its rendering partners.

Frontline International’s Waste Oil Management System Receives Innovation Award

Frontline International received a bronze award in the Kitchen Innovation Challenge at the Commercial Kitchen 2016 show, held June 7-8 in Birmingham, England. Frontline International designs, manufactures and distributes equipment to manage fresh and waste oil in restaurants and other foodservice establishments. Specifically, it was the company’s hands-free waste oil management system that was recognized by the judges.

At the show, the “Innovation Challenge Gallery” showcased the most innovative product and technology launches in the foodservice industry over the previous 12 months. The companies’ products that received the most votes at the end of day one were invited to pitch a panel of judges who would then determine the award winners. Frontline International’s waste oil management systems—distributed by Bensons Products in the UK—were invited to the challenge and won the bronze based on the increased safety and productivity they afford restaurant employees.

Frontline International’s New Flexible Filter System Makes Cleanup and Filter Management Easier

Frontline International, a leading provider of Smart Oil Management systems for fresh and waste oil, is pleased to offer a new standalone filtration system, the Flexible Filter System. The new system allows operators to easily swap out different filter media depending on the restaurant’s needs and usage. Filtration allows for longer and more consistent shortening life and can reduce shortening waste.

The two filter media choices Frontline offers are stainless steel and paper. Stainless is the most economical choice, whereas paper may increase the quality of fried foods. The new system offers a much easier way to switch from one filter medium option to another — improved over the previous design.

An additional design advantage in the new Flexible Filter System is an easily removable bucket to simplify cleanup. The new system can be used with any type or size of fryer.
